I'm not too worried about cost, simply value, and quality.

A: Definitely the la pavoni. They are so classy, makes good espresso and does not take up too much space (an important consideration for coffee shop). Some of their models allows you to use coffee grounds and pods (ready measured and sealed), this allows to make decision on operation, you need not be so reliant on barista.

A: Making the foam is not really an art - as the technique is easy - but can be difficult. The best machine to make the foam for you would be the Saeco Talea line. It has a separate Milk Island attachment that foams it really well for you. Also the Saeco machines with the Cappuccinatore attachment are excellent but again that is separate. Don't be afraid of the machines that you have to make the foam yourself. It is fun & easy to learn. I don't know about you all, but I am real picky when it comes to enjoying a perfect omelette. My preference is either a full 3 egg omelette with chedder, mushroom, scallions, or just a moist chedder omelette with an English muffin and fruit. I have ordered many omelettes, but sorry to say most of them have been lousy. The best cheese omelettes I've ever had were in Laughlin, NV and La Jolla. Many omelettes I have ordered come out as a dried out brown crusty dish that is like a burnt piece of parchment paper, even though I will order it "soft please." I have been told my omelettes I make in the kitchen are excellent, but I feel that I have not mastered it, but much better than what I have been served in places around town. Making a perfect omelette is an art, believe me, they are not forgiving. Must have the right pan, the perfect heat and time so it's not undercooked or over. Many chefs will ask a newbie cook to make an omelette as a test. Can we get a perfect omelette in LA?

A: Joan O'Groats, on Pico Blvd. in West LA (near the Rancho Park golf course) has amazing omelettes. They will not overcook it. There are many amazing delicious menu items here (pecan waffles, homemade biscuits, spicy turkey sausage, steel-cut oats) but the Grandma's omelette (with bacon inside) stands out. Also for weekend brunch, La Serenata Gourmet (also on Pico near the Westside Pavilion) makes great omelettes with your choice of sauce and beans and tortillas. Mushroom omelettes with green sauce = yum!! Both places are not the cheapest cheap eats but they are worth it.

A: There are commercial versions that are much more expensive than your home wifi router. What you have at home is sufficient for a small shop.

A: None. Starbucks doesn't franchise, neither does Coffee Bean. The chains that do franchise are relatively less known (Cuppy's, Maui Wowi, Bear Creek, It's a Grind, The Coffee Beanery, and a few others). You may be better off working as a store manager for Starbucks (health coverage is definitely going to be better), at least until you learn the ropes and are ready to go out on your own.

A: "best" is subjective.. I personally like a very laid back coffee shop. I HATE The over commercialized Greenhouse and Grasshoppers, although many consider these the best ones in the city. I like the small ones, the little hole in the wall places where the staff actually treat you OK and will actually answer your questions about the bud and won't just automatically say "here try white widow its the best".... Why is white widow the fallback strain of big coffee shops? Dunno. So, if you know ur weed (know the difference between a sativa and an indica.. or enjoy a fine blend) and want a REALLY good experience... then trust me, head to a small hole in the wall coffee shop. they are EVERYWHERE. Stay away from Bulldog, Grasshopper, and Sensi, and The Greenhouse... too commercial and SO many people flooding in at all times.. it ruins your high!
